This block is constructed using the “end-grain” of both woods, which is the standard for any butcher board of quality. The end-grain allows the knife to cut with the fibers of the wood instead of against them. Because of this feature, the wood grain actually “heals” itself. End-grain construction also allows more forgiveness on your knife’s blade so that your knives will remain sharper longer.
